Since 1973, after I got out of the AF & stayed in Tampa, I have enjoyed Cuban food. Tampa has a large Cuban community & a lot of restaurants. The food is great. One of my favorite dishes is ropa vieja which is usually made with beef.
Ropa Vieja translates to “old clothes”. Legend has it that a very poor man’s family was coming to his home for dinner. Unable to afford food for the evening, the man instead reached into his closet, ripped up some “old clothes,” and put them into a pot with what few ingredients he had on hand. He imbued his simmering pot with so much love, the legend goes, that he magically turned the clothes into food.
I’ve never tried cooking it before but thought I’d give it a try with some NY turkey breast (Thanks again Ron for the 2 spring gobblers.)
INGREDIENTS
1 tablespoon vegetable oil
2 pounds turkey breast
1 quart chicken broth
1 6 ounce can tomato paste
1 8 ounce can tomato sauce
1 teaspoon ground cumin
1 teaspoon chopped cilantro
2 gloves garlic chopped
1 small onion sliced
1 bell pepper sliced into stripes
1 tablespoon olive oil
1 tablespoon white vinegar
1/2 cup dry sherry
DIRECTIONS
1. Heat vegetable oil in a large skillet over a medium heat. Brown turkey on each side, about 24 minutes per side.
2. Transfer venison to a slow cooker. Pour in the beef broth, sherry, and tomato sauce, and then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.
